Cayenne You Stand It

Cayenne You Stand it? Spicy chocolate cupcakes

  • 2 large eggs

  • 1 cup sour cream

  • 1 tsp vanilla

  • 2 cups flour

  • 2 cups sugar

  • 1/2 tsp salt

  • 1 tsp baking soda

  • 1 cup water

  • 1/4 cup cocoa powder

  • 2 sticks butter

  • 1/2 tsp cayenne pepper

Preheat the oven to 375 degrees and bake for 20-30 min!

Easter Egg

Roll Out Cookies

These were the best cookies ever! And the most fun to decorate. We used colored frosting, food markers, and sprinkles to decorate them like Easter Eggs. Baking the cookies took about an hour and then we decorated by tye-dying them too!

Ingredients

1 1/2 cups butter, soft

1 cup sugar

1 egg

1 tsp vanilla

1 tsp almond extract

3/4 tsp. salt

3 1/2 cups flour

Beat butter with a mixer for 30 seconds. Add sugar, and baking powder and beat until combined. Beat in egg, vanilla, almond extract and salt. Roll out dough. Cut out egg shapes and bake at 375 F for 6-8 minutes until edges are slightly firm.

Fancy Frosting

4 cups of powdered sugar

3 tbsp of meringue powder (optional but makes frosting easier to spread)

1/2 cup water

1 tsp vanilla

In a mixing bowl stir together powdered sugar and meringue powder. Add the water and vanilla. Mix until it is fully combined. Beat with a mixer for 7-10 minutes until you have small peaks. After, decorate! Enjoy your cookies! :D

Makes 48, 2 - 3 inch cookies

Grandma Jeanne’s “My grandkids are Angels” Angel Food Cake

Dry mixture

1 cup of flour 

1 ½ cups powdered sugar

¼ cup cocoa

Sift above ingredients and set them aside.

Egg Mixture

12 egg whites

½ teaspoon cream of tartar

½ teaspoon of salt

1 cup of sugar

Beat the egg whites and salt in a large bowl until frothy. Add cream of tartar and beat until peaks are made. Add sugar a little at a time, Beating until stiff after each little bit. 

Fold with a spoon adding the dry mixture in a little bit at a time. Once the dry mixture has been folded with the egg mixture, pour the new mixture into an angel food cake pan. Bake the cake at 375 degrees for 30-40 minutes. Then, Bon Appetit!!

 

Super EZ Cheezy Cheese Cake

This was a super easy, no bake cheesecake that my mom and I made over the holidays. We put sugared cranberries on it and flavored it with pistachio extra. You can’t really tell here but it came out light green. You can add any kind of flavoring and topping that you want and it will be delicious!

You’ll need:

Graham Cracker Crumbs

Cream Cheese - 1 , 8 oz packet

1 packet of jell-o, any flavor

2 cups of milk

1 stick of butter

Cranberries - optional

Pistachio flavoring - optional

Melt butter and mix with the Graham Cracker Crumbs to make a crust. Then beat 1/2 c. of the milk with the cream cheese on high until it’s smooth. Add in the rest of the milk and jell-o packet until mixed. Add your flavoring at the end and mix in.

Put in the fridge for a really long time. You can tell when it is done because it won’t move back and back so much when you shake it.

Eat it all because it is SO good!

Rainy Day Sunny Cookies

 

Today was a SUPER rainy, yucky day and shelter in place for COVID-19 is still happening. We are kinda going cray cray. So, we decided to to make a sunny treat to brighten up our day! There we sooooo delicious.

 

Make it!

2 cups (4 sticks) cold butter, cubed

2 cups sugar

2 eggs

3 tsp vanilla

2 tsp almond extract

3 tsp baking powder

½ tsp kosher salt

6 cups flour

Candy - you can use what you have (some suggestions are fruit leather for a raft, chewy lifesavers for a life saver, any round candy for beach balls)

Preheat the oven to 350°F. Line a cookie sheet with parchment paper.

Mix butter and sugar together on medium speed for 2 minutes until light and fluffy!

Mix in eggs, vanilla, almond extract, baking powder, and salt and mix until smooth, make sure you stop and scrape the sides of the bowl.

Add in flour and mix until the dough looks good.

Put flour on the counter and roll out the dough. The take a glass or a circle cookie cutter and cut out shapes.

Bake cookies for 8-10 minutes until the edges are lightly golden.

SUPER IMPORTANT - Make sure you let the cookies cool before you frost them! When they are cool, frost and decorate them. They are so CUTE!
