Easter Baking!
Over the weekend before Easter my mom and I made some carrot cupcakes with cream cheese frosting. It was a busy day. Even Easter was a busy day!
Along with the cupcakes we made egg-shaped sugar cookies and macarons. It was my first time making macarons and they were very challenging for me to make. You have to make sure you have perfect circles with NO air bubbles.
Did you know that macarons are different than macaroons? They are! Macarons are meringue and macaroon’s are coconut-based. Macarons are very, very, very hard to make. They are pretty and light. You have to make sure everything is perfect. Macaroons are exactly the opposite. They are waaaaay easier to make and are bumpy and lumpy. Totally different cookie.
Besides baking, we had a fun weekend with egg hunts and fried rice from my mom’s friend Ji. It was the best rice I have ever had.
